Brewing Kombucha the Build, Sew, Reap Way
1) Acquire a hunk of scoby plus 1+ cup of kombucha.
2) Brew 5 cups of black tea plus 1/3 cup white sugar, allow to cool to room temperature.
3) Combine the scoby, kombucha, and sweet tea in a non-metal container.
4) Cover the container with a cloth and set it aside in a nice warm spot.
5) Check on it in about a week, see if you like the flavor. If so, move to step 6, if not, cover it back up and wait some more.
6) Transfer all but 1 cup of kombucha and the scoby into other containers with some juice and a few matchstick size pieces of fresh ginger. I use a 1:5 ratio of juice to tea. If you'd like, you can also cut off a small chunk of scoby to put in these containers. At this point, you can brew more tea and add the new room temperature tea to the almost empty container to start another round.
7) Put lids on containers and wait another week.
8) Taste and chill or put the lid back on for more fermenting.
9) Enjoy
